Instructions

  1. Prepare the Eggs: In a bowl, whisk the eggs with water or milk (if using) and a pinch of salt and pepper until well combined and slightly frothy.
  2. Heat the Pan: Heat a non-stick skillet (about 8 inches in diameter) over medium-low heat. Add 1 tablespoon of butter and let it melt, swirling to coat the pan.
  3. Cook the Eggs: Pour the egg mixture into the skillet. As the eggs begin to set, gently stir with a rubber spatula, lifting and folding the eggs from the edges towards the center, allowing the uncooked eggs to flow underneath.

Then, tilt the pan in the opposite direction and fold the other side towards the center, overlapping the first fold.
