- 4 chicken thighs, bone-in and skin-on
- 4 chicken drumsticks, bone-in and skin-on

- 2 tablespoons olive oil
- 1 tablespoon herbes de Provence
- 1 lemon, quartered
- 1 onion, sliced
- 4 cloves garlic, minced
- 1 cup cherry tomatoes
- 1/2 cup pitted Kalamata olives
- 1/2 cup white wine
- 1/2 cup chicken broth
- Fresh parsley, chopped, for garnish
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C).
- Season Chicken: Pat the chicken pieces dry with paper towels. Season them generously with salt, pepper, and herbes de Provence.

- Deglaze: Add the white wine to the skillet, scraping up any browned bits from the bottom. Let the wine reduce by half.
- Add Remaining Ingredients: Return the chicken to the skillet. Add the cherry tomatoes, olives, lemon quarters, and chicken broth.
