  • 1 lemon, quartered
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 1 cup cherry tomatoes
  • 1/2 cup pitted Kalamata olives
  • 1/2 cup white wine
  • 1/2 cup chicken broth
  • Fresh parsley, chopped, for garnish

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C).
  2. Season Chicken: Pat the chicken pieces dry with paper towels. Season them generously with salt, pepper, and herbes de Provence.
  3. Brown Chicken: In a large ovenproof skillet or Dutch oven, heat the olive oil over medium-high heat. Add the chicken, skin-side down, and cook until the skin is golden brown, about 5-7 minutes. Flip the chicken and cook for an additional 3-4 minutes. Remove the chicken and set aside.
  4. Sauté Aromatics: In the same skillet, add the onion and garlic. Sauté until softened, about 3-4 minutes.
  5. Deglaze: Add the white wine to the skillet, scraping up any browned bits from the bottom. Let the wine reduce by half.
  6. Add Remaining Ingredients: Return the chicken to the skillet. Add the cherry tomatoes, olives, lemon quarters, and chicken broth.
  7. Roast: Transfer the skillet to the preheated oven and roast for 25-30 minutes, or until the chicken is fully cooked and the internal temperature reaches 165°F (75°C).
