- 600g sweet new potatoes
- 2 tbsp rapeseed oil
- 1 tbsp cornflour
- 1 tsp sea salt
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1 tsp freshly ground black pepper
- Ketchup, mayo or your dipping sauce of choice to serve
Instructions
- Slice each potato into quarters lengthwise, ensuring that all pieces are similarly sized (smaller potatoes may only require halving). As you slice, place the potato wedges into a bowl of cold water, stirring to remove any excess starch. After they are thoroughly washed, drain and pat them dry.
- Combine the other ingredients to form a thin paste, then drizzle this mixture over the potato wedges. Toss everything together to ensure the wedges are uniformly coated, then let them rest for 5 minutes.
- Preheat your air fryer to 200°C. Arrange the potato wedges in the fryer basket, preferably in a single layer with space between each for the best crunch. Cook for 18-20 minutes, shaking the basket halfway through the cooking time. Serve the wedges hot, accompanied by your choice of dipping sauce.
